Electric Wok Buying Guide

When you set out to purchase your electric wok, there are several features, factors and characteristics you will need to consider. To help you find the perfect electric wok for your requirements and preferences, below we have highlighted and explained some of these important considerations.

Size/Capacity

Electric woks come in a variety of sizes, so you will need to know just how many people you plan to feed using a single wok bowl. Fortunately, with sizes ranging from 4 quarts to 8 quarts (and several sizes in between), there are lot of sizes from which to choose.

Color

The color of your electric wok is of course a matter of preference. Many woks are simply a stainless steel color, while other manufacturers use a wide variety of colors to match your kitchen décor.

Heat Settings

When cooking stir-fry and other Asian-style dishes, high heat is a must. Because of this, we recommend you purchase an electric wok that can reach at least 400 degrees F. Also, you should definitely look for a wok with plenty of different heat settings—settings that can be dialed in quickly on the fly as you cook.

Material

The lion share of electric woks on the market today feature a non-stick coating of some kind, usually Teflon. These non-stick woks have several advantages, especially when it comes time to clean up, but after a while these Teflon surfaces can become worn and start to peel, at which time it is recommended you dispose of the wok entirely. Several studies have demonstrated the potentially harmful effects of non-stick substances like Teflon when ingested.

Base

In some woks, the base or bottom portion is completely stationary, as this is where the built-in heating element is located. The bottom of an electric wok can take on two shapes: flat or rounded. Most traditional Asian woks feature a rounded bottom, which makes it easier to create delicious stir-fry and other Asian dishes, as a rounded bottom resists sticking. However, if you are not a wok purist, a flat-bottomed wok can usually produce almost equal results.

Lid

The lid of your wok can either be transparent—usually made of glass—or opaque, totally closed. We recommend you select a wok with a glass or transparent lid, as this allows you to check the progress of the dish without removing the lid and allowing the heat to escape. Be sure to select a lid with a sturdy built-in handle that will not become too hot during the cooking process.

Handles

Electric woks can be very heavy by design. As such, you will want to look for a wok with built-in side handles—handles that allow you to move it from one place to the next without too much hardship. Also, many manufacturers have created “cool handles,” which are typically made from materials that will not get too hot while the dish is cooking.
